
Breakfast Burritos, Food Matters Leftover style. Energy for the day.
Ever since I visited California last june and had the best breakfast burrito ever, (sooo much better than McDonalds), I’ve enjoyed making them at home. Now, they’re not the exact same as I had down south, but that’s half the fun.
Since we had fajitas last night, we had leftover fajita veggies and tortillas, (sold as “whole wheat” but really more like “whole chemical” – I have to start making tortillas in addition to my normal bread), I fried up some potato and egg and put it in some tortillas with the reheated vegetables. It was the best breakfast I’ve had in a while, and a truly welcome change from the oatmeal that I’ve been eating.
If we still have the required leftovers tomorrow morning maybe I’ll do the same thing!
