Last week I mentioned that we had seen some dairy-free, meat-free lasagna on the Dr. Oz show that I wanted to try. We finally got around to making it yesterday and it’s pretty good. We discovered that it’s a lot of work, a lot more work than normal lasagna, and there are a couple of things we want to change.
First, we need more sauce. We used some sauce that I made on Monday, and we just didn’t have enough. Second, we didn’t have a big enough pan, so we made the lasagna in our big pot, which just made for really thick lasagna. This, combined with our lack of sauce, meant that there was a really thick layer of unsauced spinach. Now, I like spinach, but I’m not Popeye, and the thick layer is just too much. So, my advice: more sauce, maybe a bigger pan, and maybe break up the spinach into a couple of layers.
