Eating like Food Matters while Under Pressure

It’s been six days since I wrote anything here, and that’s because I’ve been working like crazy. We’re starting a bit of a media blitz with one of the companies I work for, so I’ve been trying to make sure that everything’s as ready as possible for both reviewers and the public that we hope will follow the reviewers. Some of this stuff has taken much longer than expected, and as a result I’ve worked pretty much every waking hour since I last posted. So, the question is, with all this work, and not much time in the kitchen, what have I eaten?

I have eaten nuts, mostly cashew nuts. And salad, from a container of pre-washed spring mix. And croissants, the kind that come frozen in a box from Costco and you bake at home. We bought the croissants before Christmas, (before we read Food Matters), and figure that we should eat them, but we’re trying to not do it all at once.

So, here’s what I learned so far this week. If you’re anticipating a tough week, try to pre-prepare as much as possible. If I had had a bunch of carrots already chopped in the fridge, I would have eaten a lot fewer nuts, and I ate way too many nuts this week. Also, fewer of my carrots would have rotted in the bag. Nuts work well, but you can only eat so many of them before you start to feel sick. Don’t settle for a less nutritious breakfast becasue you think you have too much to do, (a couple of croissants and a bunch of coffee are definitely not breakfast).

Finally, when you reach the end of a long week, especially if you have solved some major problems or accomplished something that you can be proud of, celebrate! We got some sushi.
